Ingredients

Check you have the quantities below.

  • 4 cups cooked shredded chicken
  • 4 slices white bread, crusts removed
  • 2 cups milk
  • 2 tbsp aji amarillo paste
  • 1 onion, chopped
  • 3 garlic cloves
  • 2 tbsp oil
  • 1/2 cup fresh cheese or parmesan
  • 1/3 cup walnuts or pecans, chopped
  • 1 1/2 tsp salt
  • 3 cups rice, cooked
  • 4 potatoes, 3 eggs boiled potatoes and hard-boiled eggs, for serving

Let’s make it

  1. Soak the bread in milk for 5 minutes, then blend or mash smooth.
  2. Cook onion and garlic in oil until soft. Stir in aji amarillo, chicken, bread mixture, cheese, nuts, and salt.
  3. Simmer gently until thick and creamy, about 10 minutes.
  4. Serve over rice with potatoes and sliced eggs.
  5. Heat through until the chicken is piping hot.

Use only 1 tablespoon of aji amarillo for a gentler sauce.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
