Anticuchos de corazón

50 minutes · 4 servings · omnivore

A famous Peruvian street-food skewer, made simply on a grill pan.

Ingredients

Check you have the quantities below.

  • 700 g beef heart, cleaned and sliced
  • 2 tbsp aji panca paste
  • 3 garlic cloves, minced
  • 2 tbsp vinegar
  • 2 tbsp oil
  • 1 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp oregano
  • 8 skewers, soaked if wooden
  • 4 boiled potatoes, for serving

Let’s make it

  1. Mix aji panca, garlic, vinegar, oil, salt, cumin, and oregano. Marinate the beef heart for 20 minutes.
  2. Thread onto skewers.
  3. Grill or pan-sear over medium-high heat, turning until cooked through and browned, about 8–10 minutes. Cook to at least 63 C/145 F.
  4. Serve hot with potatoes.
  5. Rest 3 minutes before eating.

If serving children, cut the skewers into small pieces and keep the spice mild.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
