Arroz con pollo peruano

60 minutes · 6 servings · omnivore

A beloved Peruvian rice-and-chicken dish made with a simple one-pot method.

Ingredients

Check you have the quantities below.

  • 1 kg chicken thighs
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 3 tbsp oil
  • 1 onion, chopped
  • 4 garlic cloves
  • 2 tbsp aji amarillo paste
  • 1 packed cup cilantro, blended with 1 cup water
  • 2 cups rice
  • 1 cup peas
  • 1 cup carrots, diced

Let’s make it

  1. Season chicken with salt, pepper, and cumin. Brown it in oil, then remove.
  2. Cook onion and garlic in the same pot until soft, then stir in aji amarillo and cilantro puree.
  3. Add rice, peas, carrots, and 3 cups water. Return the chicken on top.
  4. Cover and simmer on low until the rice is tender and chicken reaches 74 C/165 F, about 25 minutes.
  5. Rest 5 minutes before fluffing and serving.

Blend the cilantro sauce very smooth for a brighter color and milder texture.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
