Camarones a la diabla

25 minutes · 4 servings · omnivore

Camarones a la diabla is a classic spicy shrimp dish; this version keeps the sauce simple.

Ingredients

Check you have the quantities below.

  • 1 1/2 pounds raw shrimp, peeled and deveined
  • 4 dried guajillo chiles, seeded
  • 4 to 6 dried chile de árbol
  • 2 garlic cloves
  • 2 medium tomatoes
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 tablespoon lime juice
  • 3 cups cooked rice

Let’s make it

  1. Soak the dried chiles in hot water for 10 minutes, then blend with the tomatoes, garlic, and 1/2 cup soaking liquid until smooth.
  2. Melt the butter in a skillet and cook the sauce for 5 minutes, then add the salt.
  3. Add the shrimp and cook just until pink and opaque and they reach 145 F / 63 C, about 3–4 minutes.
  4. Stir in lime juice and serve over rice.

Make a milder portion by using fewer chile de árbol peppers.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
