Peruvian · PANTRYHOP RECIPE
Lomo saltado
35 minutes · 4 servings · omnivore
Peru’s iconic stir-fry, adapted for a fast home skillet version.
Ingredients
Check you have the quantities below.
- 600 g beef sirloin, cut into strips
- 1 1/2 tsp salt
- 1 tsp black pepper
- 3 tbsp oil
- 1 large red onion, sliced
- 2 tomatoes, wedged
- 1 tbsp aji amarillo paste
- 3 tbsp soy sauce
- 1 tbsp vinegar
- 4 cups French fries, oven-baked or cooked separately
- 3 cups rice, cooked
- 2 tbsp cilantro, chopped
Let’s make it
- Season the beef with salt and pepper. Sear in a hot pan with oil for 2–3 minutes, then remove.
- Stir-fry onion and tomatoes briefly, then add aji amarillo, soy sauce, and vinegar.
- Return the beef and toss just until heated through. Keep the meat juicy; whole beef cuts should rest 3 minutes.
- Serve over rice with fries and cilantro.
- Adjust seasoning and serve immediately.
Cut the beef into small pieces and use fewer onions for a milder plate.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
