Rocoto relleno

90 minutes · 6 servings · omnivore

A famous Arequipa dish, adapted by softening the peppers and baking instead of using stronger techniques.

Ingredients

Check you have the quantities below.

  • 6 rocoto peppers, tops removed and seeded
  • 500 g ground beef
  • 1 onion, chopped
  • 3 garlic cloves
  • 2 tbsp oil
  • 1/3 cup raisins
  • 1 cup boiled potato, mashed
  • 1 cup fresh cheese, crumbled
  • 1/2 cup milk
  • 1 egg
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin

Let’s make it

  1. Blanch the seeded rocotos in boiling water for 5 minutes, drain, and repeat once to reduce heat.
  2. Cook onion and garlic in oil, add ground beef, salt, pepper, and cumin, and cook until the meat reaches 71 C/160 F.
  3. Stir in raisins, mashed potato, and cheese. Fill the peppers and place in a baking dish.
  4. Mix milk with egg and a pinch of salt, pour around the peppers, and bake at 190 C/375 F for 25 minutes.
  5. Rest 10 minutes before serving.

For children, make milder stuffed peppers using bell peppers instead of rocoto.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
