Tacos al pastor

35 minutes · 4 servings · omnivore

Tacos al pastor are one of Mexico’s best-known street foods, inspired by spit-roasted pork and pineapple.

Ingredients

Check you have the quantities below.

  • 1 1/2 pounds thin pork shoulder slices
  • 1/2 cup pineapple juice
  • 2 tablespoons guajillo chile paste
  • 2 garlic cloves
  • 1 tablespoon white vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 tablespoon neutral oil
  • 12 corn tortillas
  • for serving diced pineapple, onion, and cilantro

Let’s make it

  1. Mix the pineapple juice, chile paste, garlic, vinegar, cumin, and salt, then coat the pork and rest 15 minutes.
  2. Heat the oil in a skillet over medium-high heat and cook the pork in batches until browned and cooked through, about 8–10 minutes total.
  3. Warm the tortillas in a dry pan.
  4. Fill tortillas with pork and top with pineapple, onion, and cilantro.
  5. Serve hot.

Keep the toppings separate so kids can build their own mild tacos.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
