Tostadas de tinga de pollo

40 minutes · 4 servings · omnivore

Tinga de pollo is a very common shredded chicken filling from central Mexico.

Ingredients

Check you have the quantities below.

  • 3 cups shredded cooked chicken
  • 3 medium tomatoes
  • 1 medium onion, sliced
  • 2 garlic cloves
  • 1 to 2 teaspoons chipotle in adobo
  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 8 tostada shells
  • 1 cup refried beans
  • 2 cups shredded lettuce

Let’s make it

  1. Blend the tomatoes, garlic, chipotle, broth, and salt until smooth.
  2. Cook the onion in a skillet with a little oil until soft, then add the sauce and simmer 10 minutes.
  3. Stir in the chicken and cook 5 minutes more until hot.
  4. Spread refried beans on the tostadas and top with the tinga and lettuce.
  5. Serve immediately so the tostadas stay crisp.

Offer the chipotle sauce on the side for children and use extra lettuce and beans.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
