Ackee and Saltfish
35 minutes · 4 servings · omnivore
A Jamaican breakfast classic made with canned ackee for ease and weeknight practicality.
Ingredients
Check you have the quantities below.
- 8 oz / 225 g salted cod, soaked and flaked
- 2 cans (19 oz / 540 g total) ackee, drained if canned
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1 medium tomato, chopped
- 2 scallions, sliced
- 1 teaspoon fresh thyme
- 1/2 teaspoon black pepper
- 2 tablespoons neutral oil
- 1/4 cup water
- 1 tablespoon lime juice
Let’s make it
- If using salted cod, soak in cold water 1–2 hours, changing the water once; drain, cover with fresh water, and simmer 10 minutes. Drain, cool, and flake, removing bones and skin.
- Heat oil in a skillet over medium heat. Cook onion, bell pepper, and tomato for 4 minutes until softened.
- Add flaked cod, thyme, black pepper, and water. Cook 3 minutes, stirring gently.
- Fold in ackee and scallions. Heat 2–3 minutes without breaking up the ackee too much. Finish with lime juice and serve warm.
Serve with soft boiled dumplings or toast and keep the pepper out of the child's portion.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
