A Trinidadian-style callaloo using spinach for a practical home-cooking shortcut.
Ingredients
Check you have the quantities below.
- 8 cups callaloo or spinach, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 cup coconut milk
- 1/2 cup water
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon oil
Let’s make it
- Heat oil in a pot over medium heat. Cook onion and garlic for 2 minutes.
- Add tomato, thyme, and callaloo. Stir until the greens start to wilt.
- Pour in coconut milk and water. Season with salt and pepper.
- Simmer covered for 10–12 minutes until tender. Serve as a side or with bread.
Blend lightly for younger children so the greens are softer to eat.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
