Akara (Bean Fritters)

45 minutes · 4 servings · vegetarian

A familiar Nigerian bean fritter, kept simple for home cooking.

Ingredients

Check you have the quantities below.

  • 2 cups black-eyed peas, peeled
  • 1 medium red onion, chopped
  • 1 to 2 tbsp chopped fresh pepper or bell pepper
  • 1 tsp salt
  • 3 to 5 tbsp water
  • 1 to 1 1/2 cups, for frying vegetable oil

Let’s make it

  1. Rinse the beans well and grind with onion, pepper, salt, and a little water to a thick paste.
  2. Beat or stir the batter vigorously for 2 to 3 minutes until slightly airy.
  3. Heat oil in a deep pan over medium heat until a small drop of batter sizzles at once.
  4. Scoop spoonfuls into the oil and fry for 3 to 5 minutes per side until deep golden and cooked through.
  5. Drain on paper towels and serve warm.

Make small fritters so children can hold them easily.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
