Moi Moi (Steamed Bean Pudding)
90 minutes · 6 servings · omnivore
A classic steamed bean pudding; eggs are added here for a common family-style version.
Ingredients
Check you have the quantities below.
- 3 cups black-eyed peas, peeled
- 1 medium red bell pepper
- 1 medium onion
- 1/4 cup vegetable oil
- 2 tbsp ground crayfish
- 2 tsp salt
- 1 tsp ground white pepper
- 2 to 3 cups water
- 3 hard-boiled eggs, peeled and halved
Let’s make it
- Soak the peeled beans in warm water for 10 minutes, rub to loosen skins, then rinse until mostly clean.
- Blend beans with pepper, onion, oil, crayfish, salt, white pepper, and enough water to make a smooth, pourable batter.
- Pour into lightly greased cups or ramekins, filling each about three-quarters full, and add egg halves if using.
- Place in a steaming pot with enough water underneath, cover tightly, and steam gently for 45 to 55 minutes until set.
- Cool 5 minutes before unmoulding and serving.
Use muffin cups or small ramekins for easy kid-sized portions.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
