Bánh Xèo (Vietnamese Crispy Rice Pancake)

45 minutes · 4 servings · omnivore

A home version of the famous sizzling crepe, made in a skillet rather than a specialty pan.

Ingredients

Check you have the quantities below.

  • 1 cup rice flour
  • 1 tsp turmeric
  • 1 cup coconut milk
  • 1 cup water
  • 1 tsp salt
  • 8 oz (225 g) pork belly, thinly sliced
  • 8 oz (225 g) shrimp, peeled and deveined
  • 2 cups bean sprouts
  • 2 scallions, sliced
  • 2 tbsp neutral oil
  • for serving lettuce and herbs

Let’s make it

  1. Whisk rice flour, turmeric, coconut milk, water, and salt into a thin batter and let rest 10 minutes.
  2. Cook the pork in a skillet over medium heat until browned and fully cooked, then add shrimp and cook until opaque.
  3. Add a little oil to the pan, pour in batter, and tilt to coat. Add pork, shrimp, bean sprouts, and scallions. Cook covered for 3 to 4 minutes until crisp.
  4. Fold and serve with lettuce and herbs.

For kids, cut the pancake into small wedges and keep herbs on the side.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
