Bhindi masala

35 minutes · 4 servings · vegetarian

A standard dry okra sabzi found in many Indian homes.

Ingredients

Check you have the quantities below.

  • 500 g okra, trimmed and sliced
  • 3 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, sliced
  • 1 medium tomato, chopped
  • 1/4 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp salt
  • 1 tsp amchur (dry mango powder)

Let’s make it

  1. Pat the okra dry and slice it.
  2. Heat 2 tbsp oil in a pan and cook okra over medium heat until less sticky and lightly browned, about 10–12 minutes; remove.
  3. Add remaining oil, cumin, and onion; cook until soft.
  4. Stir in tomato, turmeric, coriander powder, and salt, then return the okra.
  5. Cook 5 minutes more and finish with amchur.

Cook the okra well and slice it small so it is easier to eat.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
