Breakfast burritos

30 minutes · 4 servings · omnivore

A familiar American diner-style breakfast inspired by Southwestern flavors.

Ingredients

Check you have the quantities below.

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 cup breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa

Let’s make it

  1. Whisk the eggs, milk, salt, and pepper in a bowl.
  2. Melt butter in a skillet over medium heat and scramble the eggs until fully cooked, about 4 to 5 minutes.
  3. Warm the tortillas in a dry pan or microwave so they fold easily.
  4. Fill each tortilla with eggs, sausage, cheese, and salsa, then roll tightly.
  5. Serve warm, or toast seam-side down in a skillet for 1 minute to seal.

Set the fillings out buffet-style and let children build their own burritos.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
