35 minutes · 4 servings · omnivore
A diner-style American skillet breakfast using familiar pantry vegetables.
Ingredients
Check you have the quantities below.
- 2 medium russet potatoes, diced small
- 2 tablespoons olive oil
- 1/2 medium onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 large eggs
Let’s make it
- Parboil the diced potatoes in salted water for 5 minutes, then drain well.
- Heat oil in a large skillet over medium-high heat. Add potatoes, onion, and bell pepper; cook 10 to 12 minutes, stirring, until browned and tender.
- Season with salt, pepper, and paprika.
- Make 4 wells in the hash and crack in the eggs. Cover and cook 4 to 6 minutes until the whites are fully set.
- Serve hot from the pan.
For kids, cut the potatoes very small so the hash is easy to eat with a fork.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
