Ingredients
Check you have the quantities below.
- 1 cup uncooked jasmine rice
- 6 cups water
- 300 g chicken breast
- 1 teaspoon salt
- 3 cloves garlic, smashed
- 2 cm piece ginger, sliced
- 1 tablespoon vegetable oil
- 3 tablespoons fried shallots
- 2 spring onions, sliced
- 2 tablespoons sweet soy sauce
- 1 cup crackers or kerupuk, crushed
Let’s make it
- Simmer rice with water, chicken, 1/2 teaspoon salt, garlic, and ginger over low heat for 30 to 35 minutes, stirring often, until the rice breaks down into a porridge.
- Remove the chicken when cooked through to 74 C/165 F, shred it, and keep warm.
- Season the porridge with the remaining salt. If needed, add a splash of water to loosen it.
- Spoon into bowls and top with shredded chicken, fried shallots, spring onions, sweet soy sauce, and crackers.
Serve toppings separately so children can choose their own.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
