Nasi Goreng Kampung

30 minutes · 4 servings · omnivore

A home-style fried rice using common pantry ingredients; many families vary the vegetables and protein.

Ingredients

Check you have the quantities below.

  • 4 cups cooked day-old rice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 4 shallots, sliced
  • 1 red chili, finely sliced
  • 1 cup carrot, diced
  • 1 cup cabbage, shredded
  • 1 cup cooked chicken, chopped
  • 3 tablespoons sweet soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 4 egg
  • 2 spring onions, sliced
  • 2 tablespoons fried shallots

Let’s make it

  1. Heat 1 tablespoon oil in a wok or large skillet over medium-high heat. Stir-fry garlic, shallots, and chili for 1 minute until fragrant.
  2. Add carrot, cabbage, and chicken; cook 2 minutes. Add rice, sweet soy sauce, salt, and white pepper, then toss until the rice is hot and evenly colored, 4 to 5 minutes.
  3. Push rice to the side, add the remaining oil, and fry the eggs to your liking, fully cooking the whites for children.
  4. Serve the rice topped with egg, spring onions, and fried shallots.

Leave out the chili and serve the egg yolk fully set for younger children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
