Ingredients

Check you have the quantities below.

  • 1 lb (450 g) white fish fillets, cut into chunks
  • 6 cups water
  • 1 cup pineapple chunks
  • 2 tomatoes, wedged
  • 1 cup okra, sliced
  • 1 cup bean sprouts
  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 cup cilantro or sawtooth herb

Let’s make it

  1. Bring water, tamarind paste, fish sauce, sugar, and salt to a boil, then add pineapple and tomatoes.
  2. Simmer for 8 minutes, then add okra and cook 3 minutes more.
  3. Add the fish and simmer gently for 4 to 5 minutes until it reaches 63 C/145 F and flakes easily.
  4. Stir in bean sprouts just to wilt, then serve with herbs on top.

Skip the herbs for picky eaters and serve the soup with plain rice.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
