Chả Giò (Crispy Pork Spring Rolls)
55 minutes · 4 servings · omnivore
A classic fried spring roll adapted to pan-frying instead of deep-frying.
Ingredients
Check you have the quantities below.
- 16 rice paper or spring roll wrappers
- 1 lb (450 g) ground pork
- 1 cup carrot, finely shredded
- 1 cup cellophane noodles, soaked and chopped
- 1/2 cup wood ear mushrooms, soaked and minced
- 1 egg
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1/2 tsp black pepper
- 2 tbsp neutral oil
Let’s make it
- Mix pork, carrot, noodles, mushrooms, egg, fish sauce, soy sauce, and pepper.
- Soften the wrappers if needed and fill, then roll tightly and seal the edges.
- Heat a thin layer of oil in a skillet over medium heat and pan-fry the rolls in batches, turning until all sides are crisp and the pork reaches 71 C/160 F.
- Drain on paper towels and serve with lettuce and dipping sauce.
Cut each roll into smaller pieces and serve with lots of lettuce for a less messy bite.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
