A Bahamas and Caribbean seaside favorite, kept to a simple home-fry method.

Ingredients

Check you have the quantities below.

  • 1 cup cooked conch, finely chopped
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 small onion, finely chopped
  • 1/2 bell pepper, finely chopped
  • 1 stalk celery, finely chopped
  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups oil for frying

Let’s make it

  1. Mix flour, baking powder, onion, bell pepper, celery, conch, salt, and pepper.
  2. Stir in egg and milk to make a thick batter.
  3. Heat oil to 350 F / 175 C and drop spoonfuls of batter in. Fry 3–4 minutes until golden and cooked through.
  4. Drain and serve warm.

If making for children, chop the conch very finely and skip any hot sauce.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
