Congee with Chicken and Scallions

70 minutes · 4 servings · omnivore

A simple Cantonese-style breakfast congee adapted for home cooking with chicken added for a fuller meal.

Ingredients

Check you have the quantities below.

  • 1 cup jasmine rice
  • 8 cups water
  • 8 oz / 225 g boneless chicken breast, diced
  • 1 1/2 tsp salt
  • 4 thin slices fresh ginger, sliced
  • 3 scallions, finely sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Let’s make it

  1. Rinse the rice until the water runs mostly clear. Combine rice, water, chicken, ginger, and 1 tsp salt in a pot.
  2. Bring to a boil, then lower to a bare simmer. Cook 55–60 minutes, stirring now and then, until the rice breaks down and the chicken is fully cooked to 74 C/165 F.
  3. Remove the ginger slices. Stir in the remaining salt to taste, soy sauce, and sesame oil.
  4. Ladle into bowls and top with scallions.

Let the congee cool a little and offer the chicken in small spoonfuls on the side if needed.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
