Escovitch Fish

45 minutes · 4 servings · omnivore

A classic Jamaican escovitch fish made in a skillet rather than deep-fried.

Ingredients

Check you have the quantities below.

  • 1 1/2 lb / 700 g whole snapper fillets or other firm fish fillets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons oil for pan-frying
  • 1/2 cup vinegar
  • 1 onion, thinly sliced
  • 1 carrot, julienned
  • 1/2 bell pepper, sliced
  • 1/4 teaspoon allspice berries or ground allspice
  • 1 teaspoon sugar

Let’s make it

  1. Season fish with salt and pepper, then lightly dust with flour.
  2. Pan-fry in hot oil over medium-high heat until cooked through and the fish reaches 145 F / 63 C, about 3–4 minutes per side for fillets. Remove to a plate.
  3. In a small pan, warm vinegar, onion, carrot, bell pepper, allspice, and sugar for 2–3 minutes until just softened.
  4. Spoon the hot escovitch vegetables over the fish and serve.

For children, serve the fish without the sharp vinegar vegetables.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
