Italian · PANTRYHOP RECIPE
Frittata di zucchine
30 minutes · 4 servings · vegetarian
A classic Italian egg bake; many families add whatever vegetables they have on hand.
Ingredients
Check you have the quantities below.
- 2 medium (about 300 g), grated zucchini
- 6 large eggs
- 50 g, finely grated Parmesan cheese
- 2 tbsp olive oil
- 1 small, finely chopped yellow onion
- 1/2 tsp salt
- 1/4 tsp black pepper
Let’s make it
- Heat the oven to 190 C / 375 F. In a 23 cm / 9 in ovenproof skillet, warm the olive oil over medium heat.
- Cook the onion for 3 minutes, then add the zucchini and salt. Cook 4–5 minutes until the moisture reduces.
- Whisk the eggs with pepper and Parmesan, then pour into the skillet. Stir once to distribute the vegetables.
- Cook 2 minutes on the stove, then bake 8–10 minutes until set in the center and lightly golden. Rest 5 minutes before slicing.
Cut into small wedges and serve with bread or fruit.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
