A popular noodle soup found in Vietnam, here simplified with ready-made broth.

Ingredients

Check you have the quantities below.

  • 8 oz (225 g) rice or egg noodles
  • 6 cups chicken broth
  • 8 oz (225 g) pork loin, thinly sliced
  • 8 oz (225 g) shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups bean sprouts
  • 2 tbsp scallions
  • 1/4 cup cilantro

Let’s make it

  1. Bring the broth to a simmer with garlic, fish sauce, salt, and sugar.
  2. Add the pork and cook until no longer pink, then add the shrimp and cook until opaque and the pork reaches 63 C/145 F.
  3. Cook the noodles separately and divide into bowls with bean sprouts.
  4. Ladle broth over the noodles and finish with scallions and cilantro.

Serve the broth mild and let kids add bean sprouts only if they want them.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
