Ingredients

Check you have the quantities below.

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 3/4 cups water
  • 1 leaf pandan leaf or bay leaf
  • 1 tsp salt
  • 4 eggs
  • 1 cucumber, sliced
  • 1/3 cup peanuts, toasted
  • 1/3 cup small dried anchovies, rinsed and fried or toasted
  • 1 tbsp oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp chili paste
  • 1 tbsp tamarind paste
  • 1 tbsp sugar
  • 1/4 tsp salt

Let’s make it

  1. Rinse rice and cook with coconut milk, water, pandan leaf, and salt in a rice cooker or pot until tender, then rest 10 minutes.
  2. For sambal, sauté onion and garlic in oil 3 minutes. Add chili paste, tamarind paste, sugar, and salt. Cook 5–7 minutes until glossy.
  3. Boil or pan-fry eggs until fully cooked to your preference.
  4. Serve rice with egg, cucumber, peanuts, and anchovies, plus sambal on the side.
  5. Keep the sambal mild for children and let adults add extra to taste.

Make a small mild portion first, then offer sambal separately.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
