Natto Gohan (Fermented Soybeans over Rice)

8 minutes · 2 servings · vegan

A well-known Japanese breakfast staple; ingredients are kept minimal and familiar.

Ingredients

Check you have the quantities below.

  • 2 cups hot cooked Japanese short-grain rice
  • 1 package (about 45 g) natto
  • 2 tsp soy sauce
  • 1 tsp Japanese mustard
  • 2 tbsp scallions, sliced

Let’s make it

  1. Stir the natto vigorously in its container for 30-60 seconds until sticky and foamy.
  2. Mix in the soy sauce and mustard.
  3. Divide the hot rice between 2 bowls and spoon the natto over the top.
  4. Finish with scallions and serve immediately.

If the flavor is new for kids, start with a tiny spoonful on rice and let them add more if they like it.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
