Phở Gà (Chicken Pho)

60 minutes · 4 servings · omnivore

A classic noodle soup made in a straightforward home style with a clear chicken broth.

Ingredients

Check you have the quantities below.

  • 8 oz (225 g) rice noodles
  • 8 cups water
  • 1 1/2 lb (680 g) chicken thighs or drumsticks
  • 1 medium onion, halved
  • 2 inches ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 tbsp fish sauce
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 2 cups bean sprouts
  • 1 cup total basil and cilantro
  • 2 lime wedges

Let’s make it

  1. Char the onion and ginger in a dry pan for 3 to 4 minutes. Add them to a pot with water, chicken, star anise, cinnamon, salt, fish sauce, and sugar.
  2. Simmer gently for 35 minutes until the chicken is fully cooked to 74 C/165 F. Remove the chicken and shred it.
  3. Cook the noodles separately according to package directions and divide into bowls.
  4. Strain the broth, return it to the pot, and ladle over noodles and chicken. Top with bean sprouts, herbs, and lime.

Serve the herbs and sprouts separately so children can choose what to add.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
