Saltfish Accra Fritters

40 minutes · 6 servings · omnivore

A Caribbean bar and snack favorite made in a small-batch skillet-fry method.

Ingredients

Check you have the quantities below.

  • 6 oz / 170 g salted cod, soaked, cooked, and flaked
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 small onion, finely chopped
  • 2 scallions, finely chopped
  • 2 tablespoons parsley, chopped
  • 1/4 teaspoon black pepper
  • 3/4 cup water
  • 3 cups oil for frying

Let’s make it

  1. If using salted cod, soak and cook it first, then flake it finely.
  2. Mix flour, baking powder, onion, scallions, parsley, black pepper, and cod. Stir in water to make a thick batter.
  3. Heat oil to 350 F / 175 C. Drop spoonfuls of batter into the oil and fry 2–3 minutes per side until golden.
  4. Drain on paper towels and serve warm.

Skip extra pepper and make small fritters for easier snacking.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
