Stuffed Eggplant with Tomato Sauce

75 minutes · 6 servings · omnivore

A classic stuffed-vegetable dish commonly cooked in Lebanese homes.

Ingredients

Check you have the quantities below.

  • 6 small eggplants
  • 1/2 lb (225 g) ground beef
  • 1/2 cup rice
  • 1 small onion, grated
  • 2 cups tomato sauce
  • 1 1/2 cups water
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Let’s make it

  1. Cut a slit in each eggplant and scoop out a little flesh to make room for filling.
  2. Mix beef, rice, onion, salt, and pepper.
  3. Stuff the eggplants loosely.
  4. Place in a pot with tomato sauce, water, and oil, then simmer covered on low for 45-50 minutes until the rice is tender and beef is cooked to 71 C/160 F.
  5. Serve with sauce spooned over top.

Choose small eggplants and cut them into halves for easier kid servings after cooking.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
