Zeytinyağlı Taze Fasulye

50 minutes · 4 servings · vegan

A very traditional Turkish olive-oil vegetable dish, made in a simple pot method.

Ingredients

Check you have the quantities below.

  • 500 g fresh green beans, trimmed
  • 1/4 cup olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 3 medium tomatoes, chopped
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 cup water

Let’s make it

  1. Cook the onion in olive oil over medium heat for 5 minutes.
  2. Add the garlic, tomatoes, salt, sugar, and water, then stir in the green beans.
  3. Cover and simmer on low for 30 to 35 minutes until the beans are very tender.
  4. Cool slightly and serve warm or at room temperature.
  5. Drizzle with a little more olive oil if desired.

This is mild and soft, so it works well for children; cut the beans into smaller pieces if needed.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
