Ingredients

Check you have the quantities below.

  • 3 cups, cooled cooked risotto or rice
  • 150 g, cubed mozzarella
  • 1/2 cup, grated Parmesan cheese
  • 1 large egg
  • 1 cup breadcrumbs
  • 1/4 cup flour

  • 1/2 tsp salt

Let’s make it

  1. Heat the oven to 220 C / 425 F and lightly oil a baking tray.
  2. Mix the cooled rice with Parmesan, egg, and salt. Shape into 12 balls, placing a cube of mozzarella in the center of each.
  3. Roll the balls in flour, then breadcrumbs, and place on the tray. Drizzle with oil.
  4. Bake 18–20 minutes until crisp and heated through.

Make mini arancini for easier little-hand portions.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
