Beef Rendang

150 minutes · 6 servings · omnivore

A traditional slow-cooked Malaysian beef rendang kept simple for the home stove.

Ingredients

Check you have the quantities below.

  • 900 g beef chuck, cubed
  • 2 cups coconut milk
  • 1 cup water
  • 2 medium onion, chopped
  • 4 cloves garlic
  • 2 cm piece ginger
  • 2 cm piece galangal or extra ginger
  • 2 stalks lemongrass
  • 2 tbsp curry powder
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 1/2 tsp salt
  • 1 tbsp sugar

Let’s make it

  1. Blend onion, garlic, ginger, galangal, and a little water into a paste.
  2. Combine beef, paste, coconut milk, water, lemongrass, curry powder, coriander, turmeric, salt, and sugar in a heavy pot.
  3. Bring to a gentle simmer, then cook uncovered on low heat 2 to 2 1/2 hours, stirring often, until the beef is tender and the sauce is thick and dark.
  4. Remove lemongrass and adjust seasoning.
  5. Serve with rice.
  6. Add a splash of water if it gets too dry before the beef is tender.

Shred the beef slightly so it mixes easily with rice for children.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
