Ingredients

Check you have the quantities below.

  • 2 lb / 900 g beef chuck, cubed
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp flour
  • 4 oz / 115 g bacon, diced
  • 1 tbsp olive oil
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 3 cups / 720 ml beef broth
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp thyme
  • 8 oz / 225 g mushrooms, halved

Let’s make it

  1. Heat the oven to 325 F / 165 C. Toss beef with salt, pepper, and flour.
  2. Cook bacon in a Dutch oven, then add oil and brown the beef in batches.
  3. Add onions, carrots, and garlic; cook 5 minutes. Stir in broth, tomato paste, bay leaf, and thyme.
  4. Cover and bake 2 to 2 1/2 hours until the beef is tender. Stir in mushrooms for the last 20 minutes. Remove the bay leaf before serving.

Serve with mashed potatoes so children can eat the stew more easily.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
