Briam

75 minutes · 6 servings · vegan

Briam is a classic Greek vegetable bake, similar to a Mediterranean ratatouille-style dish.

Ingredients

Check you have the quantities below.

  • 2 zucchini, sliced
  • 1 medium eggplant, sliced
  • 3 medium potatoes, thinly sliced
  • 3 tomatoes, sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tsp dried oregano
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup water

Let’s make it

  1. Heat oven to 400 F / 200 C. Arrange the vegetables in a large baking dish.
  2. Mix olive oil, garlic, oregano, salt, pepper, and water, then pour over the vegetables.
  3. Cover with foil and bake 35 minutes.
  4. Uncover and bake 20 to 25 minutes more until browned and tender.
  5. Serve warm or at room temperature.

Roasting makes the vegetables sweeter and easier for kids to eat.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
