Bruschetta ai funghi
20 minutes · 4 servings · vegetarian
A mushroom version of Italian bruschetta, commonly served as an antipasto.
Ingredients
Check you have the quantities below.
- 8 bread slices
- 3 tbsp olive oil
- 250 g, finely chopped mushrooms
- 1 clove, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp, chopped parsley
Let’s make it
- Toast the bread slices until crisp.
- Cook the mushrooms in 2 tbsp olive oil over medium heat for 6–8 minutes until their moisture evaporates. Add garlic, salt, and pepper for the last 30 seconds.
- Spoon the mushrooms onto the toast and drizzle with the remaining oil.
- Scatter with parsley and serve warm.
Chop the mushrooms very fine so the topping stays on the toast.
