Ingredients

  • 4 chops, about 2 lb / 900 g pork chops, bone-in
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot, minced

  • 1/2 cup / 120 ml chicken broth
  • 1/2 tsp thyme

Let’s make it

  1. Season the pork chops with salt and pepper. Brown them in oil and butter over medium-high heat, 3 to 4 minutes per side.
  2. Add shallot and cook 1 minute, then stir in broth, mustard, and thyme.
  3. Cover and cook over low heat until the pork reaches 145 F / 63 C and rests 3 minutes, about 6 to 10 minutes more depending on thickness.
  4. Stir in cream and spoon the sauce over the chops before serving.

Slice the pork thinly and serve with mashed potatoes for easier eating.
