A green pandan crepe filled with sweet coconut, common in Indonesian snack stalls.

Ingredients

Check you have the quantities below.

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cups coconut milk
  • 1 teaspoon or 2 tablespoons pandan paste or juice
  • 1/4 teaspoon salt
  • 2 cups grated coconut
  • 3/4 cup palm sugar
  • 1/4 cup water

Let’s make it

  1. Whisk flour, eggs, coconut milk, pandan, and salt into a thin batter.
  2. Cook thin crepes in a lightly oiled nonstick pan over medium-low heat until set, about 1 minute per side.
  3. Simmer grated coconut, palm sugar, and water for 5 minutes until the filling is moist and sweet.
  4. Fill and roll the crepes into neat cylinders.

Make small rolls so they are easy for little hands to hold.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
