Dakjuk (Korean Chicken Porridge)

45 minutes · 4 servings · omnivore

Dakjuk is a classic Korean chicken rice porridge made easy with cooked chicken.

Ingredients

Check you have the quantities below.

  • 2 cups cooked chicken, shredded
  • 2 cups cooked short-grain rice
  • 6 cups water or chicken broth
  • 1/2 cup carrot, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tbsp sesame oil
  • 1 scallion, sliced

Let’s make it

  1. Bring broth, carrot, and garlic to a simmer. Cook until the carrot is soft, about 10 minutes.
  2. Add rice and simmer 15 minutes, stirring often, until the porridge thickens.
  3. Stir in shredded chicken and salt. Cook 5 minutes until hot throughout.
  4. Finish with sesame oil and scallion.

This is soft and mild, so it works well for kids and simple meals.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
