Check you have the quantities below.
- 3 cups cooked short-grain rice
- 1 cup kimchi, chopped
- 2 tbsp kimchi juice
- 4 oz (115 g) pork belly or bacon, diced
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 tbsp neutral oil
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 egg

- 1 tsp sesame seeds
Let’s make it
- Heat a skillet over medium-high heat and cook the pork belly or bacon until browned, 3-4 minutes.
- Add onion and garlic; cook 1 minute. Stir in kimchi and cook 2 minutes.
- Add rice, kimchi juice, and soy sauce. Stir-fry until hot and evenly coated, 3-4 minutes.
- Push rice to the side and fry the eggs in the same pan to your liking; for kids, cook yolks fully. Top with sesame oil, scallions, and sesame seeds before serving.
For children, use mild kimchi, chop it small, and cook the eggs through.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
