Korean · PANTRYHOP RECIPE
Kimchi Jjigae with Pork
35 minutes · 4 servings · omnivore
A familiar Korean stew built around fermented kimchi and tofu.
Ingredients
Check you have the quantities below.
- 2 cups kimchi, chopped
- 1/4 cup kimchi juice
- 8 oz (225 g) pork shoulder or belly, sliced
- 3 cups water
- 1 cup onion, sliced
- 3 cloves garlic, minced
- 1 block (14 oz/400 g) tofu, cubed
- 1-2 tsp gochugaru
- 1 tsp soy sauce
- 1 tsp sesame oil
- 2 scallions
Let’s make it
- Cook the pork in a pot over medium heat until lightly browned, 4-5 minutes.
- Add kimchi, onion, garlic, kimchi juice, water, and gochugaru. Bring to a boil, then simmer 15 minutes.
- Add tofu and soy sauce. Simmer 5-7 minutes more until the pork is cooked through and the stew is bubbling.
- Finish with sesame oil and scallions. Serve with rice.
For kids, use less gochugaru and cut the kimchi small so the stew tastes gentler.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
