Dakos Salad

15 minutes · 4 servings · vegetarian

Dakos is a classic Cretan salad; barley rusks are traditional, though any sturdy toasted bread works in a pinch.

Ingredients

Check you have the quantities below.

  • 4 Cretan barley rusks
  • 3 cups ripe tomatoes, grated or finely chopped
  • 1 cup feta, crumbled
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 2 tbsp capers, drained
  • 1/4 tsp salt

Let’s make it

  1. Place the rusks on plates and lightly dampen them with a few spoons of water so they soften slightly.
  2. Top with the tomatoes and their juices.
  3. Add feta, capers, oregano, salt, and olive oil.
  4. Serve right away while the rusks still have some texture.

For kids, serve the toppings on the side so they can build their own plate.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
