Ingredients

Check you have the quantities below.

  • 12 oz / 340 g dried wheat noodles
  • 8 oz / 225 g ground pork
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp soy sauce
  • 2 tbsp sesame paste or tahini
  • 1–2 tbsp chili oil
  • 1 tbsp Chinese black vinegar or rice vinegar
  • 1/2 cup chicken broth or noodle water
  • 2 scallions, sliced

Let’s make it

  1. Cook noodles according to package directions. Reserve 1/2 cup cooking water, then drain.
  2. Cook pork with garlic and ginger in a skillet until browned and fully cooked to 71 C/160 F. Stir in soy sauce.
  3. Whisk sesame paste, chili oil, vinegar, and broth or noodle water to make the sauce.
  4. Toss noodles with the sauce and top with pork and scallions.
  5. Serve immediately.

For children, use less chili oil and extra noodle water for a milder sauce.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
