Ingredients

Check you have the quantities below.

  • 10 cups spinach or ugu leaves, chopped
  • 3 medium tomatoes
  • 2 medium red bell pepper
  • 1 medium onion
  • 1/3 cup palm oil

  • 1 tbsp locust beans (iru), optional
  • 2 tsp salt
  • 1 tsp ground pepper

Let’s make it

  1. Blend tomatoes, bell pepper, and half the onion until smooth.
  2. Heat palm oil, sauté the remaining onion, then add the pepper mixture and cook 10 to 15 minutes until reduced.
  3. Stir in crayfish, iru if using, salt, pepper, and smoked fish or cooked beef.
  4. Add the spinach and cook 3 to 5 minutes just until wilted and well mixed.
  5. Serve with rice, yam, or swallow.

Chop the greens finely so the stew is easy to chew.
