Eggplant with Garlic Sauce

30 minutes · 4 servings · vegan

A popular Chinese vegetarian stir-fry adapted to avoid deep-frying.

Ingredients

Check you have the quantities below.

  • 2 large Chinese eggplant, cut into batons
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp cornstarch
  • 1/4 cup water
  • 2 tbsp neutral oil
  • 2 scallions, sliced

Let’s make it

  1. Heat oil in a large skillet over medium-high heat. Cook eggplant, stirring often, until browned and tender, 8–10 minutes; add a splash of water if needed.
  2. Stir garlic briefly, then add soy sauce, vinegar, sugar, cornstarch, and water.
  3. Cook 1–2 minutes until glossy and coated.
  4. Top with scallions and serve with rice.

Cook the eggplant until very soft so it is easy for kids to chew.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
