Fava Split Pea Puree

55 minutes · 4 servings · vegan

Fava in Greece is a silky split pea puree, often served as a meze with olive oil and onion.

Ingredients

Check you have the quantities below.

  • 1 1/2 cups yellow split peas
  • 1 medium onion, chopped
  • 1/4 cup olive oil
  • 1 bay leaf
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 5 cups water

Let’s make it

  1. Rinse the split peas. Put them in a pot with onion, bay leaf, salt, pepper, and water.
  2. Bring to a boil, then simmer 35 to 40 minutes until very soft, skimming if needed.
  3. Remove the bay leaf and mash or blend until smooth.
  4. Stir in olive oil and lemon juice.
  5. Serve warm or at room temperature.

Blend it extra smooth and serve with bread for an easy dip children can scoop up.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
