Galettes Complètes (Buckwheat Ham, Egg, and Cheese Crepes)
30 minutes · 4 servings · omnivore
A well-known Breton buckwheat galette made in a practical stovetop version.
Ingredients
Check you have the quantities below.
- 1 cup / 120 g buckwheat flour
- 1/2 cup / 60 g all-purpose flour
- 2 cups / 480 ml water
- 1 large egg
- 1/2 tsp salt
- 2 tbsp butter
- 4 large eggs
- 4 slices cooked ham
- 1 cup / 100 g Gruyère or Emmental cheese, grated
Let’s make it
- Whisk both flours, water, 1 egg, and salt into a thin batter; rest 10 minutes while you prep the fillings.
- Heat a lightly buttered skillet over medium heat and cook 4 thin crepes, about 1 minute per side.
- For each crepe, place ham and cheese in the center, crack an egg on top, and fold the edges in to make a square or open pocket.
- Cook covered until the egg is fully set and the cheese melts, 3 to 5 minutes. Serve warm.
For kids, cook the egg fully set and cut the galette into wedges.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
