Ethiopian · PANTRYHOP RECIPE
Genfo (Ethiopian porridge)
25 minutes · 4 servings · vegetarian
Genfo is traditionally cooked very thick and eaten with spiced butter; this version keeps the same basic method with simple ingredients.
Ingredients
Check you have the quantities below.
- 1 cup whole wheat flour or barley flour
- 4 cups water
- 1/2 teaspoon salt
- 3 tablespoons niter kibbeh or butter
- 1 teaspoon berbere spice
- 1 cup plain yogurt, for serving
Let’s make it
- Bring the water and salt to a boil in a saucepan over medium-high heat.
- Whisk in the flour slowly, then reduce to low. Stir constantly for 10 to 12 minutes until very thick.
- Spoon into bowls and make a shallow well in the center.
- Melt the butter with berbere and drizzle into the well. Serve with yogurt on the side.
Serve the spicy butter separately so children can add only a little or none.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
