Kicha Fitfit
25 minutes · 4 servings · vegetarian
Kicha fitfit is a common quick meal made from torn unleavened bread mixed with aromatics.
Ingredients
Check you have the quantities below.
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup water
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 1 medium tomato, finely chopped
- 2 scallions, sliced
- 1 teaspoon mild paprika or berbere
Let’s make it
- Mix flour, salt, and water to make a thick batter. Let it rest 5 minutes.
- Heat 1 tablespoon oil in a skillet over medium heat. Pour in the batter and cook like a thick pancake, 3 to 4 minutes per side.
- Tear or chop the cooked kicha into pieces.
- Warm the remaining oil and butter with tomato, scallions, and paprika. Toss with the kicha and heat 2 minutes more.
Use paprika instead of berbere for a gentler flavor.
Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
