Gigantes Plaki

95 minutes · 6 servings · vegan

Gigantes plaki is a much-loved Greek bean bake, usually served as a meze or light meal.

Ingredients

Check you have the quantities below.

  • 2 cups dried giant beans or large lima beans
  • 1/4 cup olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups tomato passata
  • 2 tbsp tomato paste
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 2 tbsp parsley, chopped
  • 1 tsp dried oregano
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Let’s make it

  1. Soak the beans if needed, then boil until just tender, about 45 to 60 minutes. Drain.
  2. Heat oven to 375 F / 190 C. Sauté onion, carrot, and celery in olive oil for 8 minutes. Add garlic and cook 1 minute.
  3. Stir in tomato passata, tomato paste, parsley, oregano, salt, pepper, and 1/2 cup water. Simmer 10 minutes.
  4. Combine the beans and sauce in a baking dish. Bake 25 minutes until thick and bubbling.
  5. Rest 10 minutes before serving.

Mash a few beans into the sauce to make it softer and more kid-friendly.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
